I'm going to play The Old Realms which is a warhammer mod for Bannerlord, I don't like Warhammer but I think weird fantasy mods and all the things you can do with them are fun at least. There also aren't really many full conversion mods out, it seems to be taking a while for people to make them. There is a Lord of the Rings Mod called Kingdoms of Arda that looks interesting but has been in development for ages and still isn't even in a playable state. There is also the Japanese mod but I am not sure how far that is in development, I really hope it has Touhous in it like Gekkojou did.
I wonder if the modding scene is as strong as it used to be, I think that with the tools available to us now, people that are interested in 3d modelling and game development can create their own projects that are their own and they can actually monetise rather than working on mods, so there probably is less incentive for it now.
