I usually add an egg right after boiling the noodles, so it incorporates into the sauce when stirred. Other than that I use Kimchi, pickled cabbage, sliced cucumber, bamboo stripes, scrambled egg, seaweed and fried and seasoned minced meat. Not all at the same time though. The pickled cabbage is especially great.
Pickled Cabbage
- 1/4 white cabbage
- 1/2 onion
- 1 clove of garlic
- pepper corns
- mustard seeds
- vinegar, sugar, salt, water
Cut the cabbage into thin stripes and steam them for a short time. Heat up vinegar, sugar, salt and water. The liquid should be equally salty, sweet and sour. Add pepper corns, mustard seeds, crushed garlic and chopped onion. Fill everything into a clean jar with a lid and wait at least three days. Store in the fridge after opening.
